Health Benefits of Coconut Nectar
Coconut nectar is made in very much the same way as maple syrup — by tapping into the coconut tree to release the sap.
The sap is heated just enough for the water to evaporate and the syrup to thicken, but not enough to create high levels of fructose, which breaks down in the liver and easily converts into fat.
Even though coconut nectar has a number of health benefits,
sugar = sugar = sugar no matter how it’s packaged up.
Coconut Nectar has Great Flavor
The flavor of coconut nectar does not taste like coconut at all, which is good as some people don’t like the flavor of coconut.
It has a rich, buttery, almost caramel flavor to it with a consistency similar to maple syrup.
Coconut Nectar Ranks Low on the Glycemic Index
The Glycemic Index (GI) measures how a food affects your body’s blood sugar levels and insulin response.
A low GI food ranks 55 or less, which slows digestion and helps regulate blood sugar.
Coconut nectar has a GI of about 35, which is a great alternative to maple syrup, which has a GI of 54.
Using coconut nectar in recipes will help reduce your blood-sugar spike.
Alternative to Coconut Nectar
Simply boil 6 dates in 1/3 cup water. Once soft, blend the mixture until completely smooth. Replace the coconut nectar with the entire date syrup mixture.
As an added bonus, the dates provide extra fiber.
Vanilla Powder vs. Vanilla Extract
Both vanilla powder and vanilla extract are great ways to add vanilla flavor; however, they don’t have the same characteristics.
Depending on your goals, and your health concerns, you may choose vanilla powder over vanilla extract.
Vanilla extract is simply alcohol infused with vanilla beans. You can make your own by soaking vanilla beans in vodka.
I personally choose to exclude vanilla extract because of the alcohol content. I eat as clean as I possibly can, but more importantly, with my kidney failure, I also avoid all alcohol – even the trace amounts found in vanilla extract.
If you decide to use vanilla extract, make sure you find a Gluten-Free option.
Vanilla powder is made from the actual vanilla bean pods. Each vanilla bean pod contains little black seeds, which are removed and then ground into a powder.
Powders don’t contain any alcohol like the extracts do.
- 1 can coconut cream
- 4 egg yolks
- 1/4 cup coconut nectar
- 1/4 tsp kosher salt
- 1 tbsp ground flax seeds
- 3 oz unsweetened chocolate bar
- 1 tsp vanilla bean powder (optional)
- In a small saucepan, heat the coconut cream until simmering.
- In a small bowl, whisk together the yolks, coconut nectar, and salt.
- Slowly add half of the hot coconut cream into the yolk mixture, while whisking continuously.
- Pour the mixture back into the saucepan over medium-low heat, add the ground flax seeds, and whisk for 1 minute.
- Take the saucepan off heat and mix in the chocolate and vanilla powder (optional).
- Serve warm (which is amazing) or place the pudding in a sealed container and store in the fridge to eat cold.
4 Amazing Paleo Treats using Dairy Free Chocolate Pudding
This Dairy Free Chocolate Pudding recipe can be slightly tweaked to create four more amazing Paleo Treats.
Simply mix 2 tbsp of almond flour and 1 tbsp tapioca flour with 1/4 cup of Dairy Free Chocolate Pudding and bake at 425-degrees for 10 minutes.
Chocolate Fudge Popsicles
Add the pudding mixture to this popsicle mold and freeze for 4 hours.
Layered Chocolate Pudding
Simply layer the pudding with anything you desire. Some layers I’ve used are:
- Coconut Cream – Plain
- Coconut Cream with Chia Seeds (mixed together)
- Shredded Unsweetened Coconut
- Raw Cacoa Nibs
- Goji Berries
Chocolate Pudding Icing
Once the pudding is cold, add the full mixture to an icing bag and squeeze on top of Paleo Cupcakes or Cake using one of these five stainless-steel icing tips.
