Wash ’em really well, and simply chop ’em up.

Fresh beets, from a local farm, will have softer and more flavorful skin since it spends less time traveling from farm to table.
Roasted Paleo Beets
- 8 small beets
- 2 tbsp avocado oil
- 1/2 tsp salt
- Heat the oven to 400 degrees.
- Remove the dry, tough areas of the beets, usually near the green stalks, and cut into slices.
- Spread the beets on a baking sheet, lined with parchment paper, and sprinkle with avocado oil and salt.
- Roast them in the oven for 30-minutes or until beets are tender.
