Irish Corned Beef & Cabbage
What’s the first St. Patrick’s Day meal that comes to mind?
Corned Beef and Cabbage?
That’s certainly my first thought. We make it at least once a year to celebrate St. Patrick’s Day.
What is Corned Beef?
Corned Beef is simply a nice, beautiful beef brisket that has been cured in a brine made up of water, salt, and a lot of spices. Usually the beef brisket will cure for at least a week or up to 10 days.
Grocery stores sell fully cured Corned Beef so you don’t have to cure it yourself, but unfortunately, if you’re Paleo, the Corned Beef from the grocery store usually contains sugars and/or unnatural ingredients.
If you’ve got the time, cure the beef brisket yourself and enjoy the wonderful flavors, but know that you can still enjoy a wonderful smoked beef brisket instead and save yourself a lot of trouble…not to mention, free some space in the refrigerator.
Corned Beef & Cabbage Recipes
Traditional Irish Corned Beef is cooked similar to a roast over low heat for several hours. But don’t limit your creativity here. You can play around with the same ingredients and come up with some fun alternate recipes.

More Great Cabbage Recipes
Don’t let your creativity stop there. You also have several ways to enjoy cabbage as well.
My absolute favorite is this Pressure Cooker Cabbage recipe. Literally, the cabbage is done within 15 minutes! I’m not joking either. A pressure cooker or an Instant Pot can certainly be a game-changer in Paleo cooking.
If you have more time, this Baked Cabbage is absolutely wonderful too. Add your Corned Beef on top of the cabbage and cook them both in the oven for a delicious one-pot-wonder.
Lastly, Roasted Cabbage or Roasted Brussels Sprouts are also a great alternative. Roasting brings out the naturally sweet flavor of the cabbage and creates a nice crunchy texture. Some of the outside layers of the cabbage become crunchy like a chip. Those yummy morsels are usually gone before we even sit down at the table.
Traditional Irish Stew is made with lamb, but you can substitute beef if you like. Sometimes the abundance of beef makes it easier to use in recipes.
Irish Shepard’s Pie
Traditional Shepard’s Pie is made with ground lamb and cooked with non Paleo-approved ingredients such as butter, flour and cream. Not to mention the only vegetables added are corn and peas, which is laughable from the Paleo community.
This recipe for Shepard’s Pie strays from the traditional, but it’s a complete upgrade and now fits within a Paleo lifestyle. By adding more vegetables, this version is now packed with nutrition, yet still retains it’s traditional feel. Not to mention, it’s a very satisfying Paleo dish.
Colcannon is an Irish dish traditionally made from mashed potatoes and sauteed cabbage or kale blended together and seasoned with either onions, shallots, or leeks. Colcannon stems from the Gaelic cal ceannann’ (white-headed cabbage) and the Irish cainnenn’ (interchangeably for garlic, onion, or leek).
The preparation of Colcannon dates all the way back to 1735 and the recipe hasn’t changed too much over the years. Thanks to the Irish culture and whomever it was that created such a rich and creamy side.
Irish Soda Bread
A Paleo St. Patrick’s Day is not complete without some traditional Irish Soda Bread. This can be prepared either as a breakfast scone or a dinner side. Either way, it’ll be delicious!
This Paleo Bread recipe is a great base for any and all types of variations. Simply add currants and orange zest to the recipe and enjoy the traditional flavors of Irish Soda Bread.
