Sautéed Green Beans



Wait, I thought this was a green bean recipe.

These green beans are just an excuse to eat….BACON.  I mean, do you need an excuse to eat bacon?  If so, you will love these sautéed green beans.  This is pretty traditional in the south, especially here in Texas.  If you haven’t cooked green beans this way, you really need to test out this recipe.

Fresh green beans are the best for this recipe, but you can substitute frozen if you prefer.  If using frozen green beans, your cooking time may decrease slightly.

Serves 6


  • 1 package of bacon (See my post on Best Paleo Replacements for natural, sugar-free bacon)
  • 1 medium onion
  • 8 cups green beans
  • salt and pepper to taste


  1. Cut the bacon and place it in a dry pot over medium heat and stir occasionally.
  2. While the bacon cooks, chop the onion.
  3. Once the bacon is fully cooked and the fat is rendered, about 10 minutes, add the onions to the pot.
  4. Sauté the onions in the bacon fat until the onions are translucent.
  5. Add the green beans and season with salt and pepper.
  6. Lower the heat to medium-low and cook, covered, for 20 minutes or until green beans are done.
